What is a marinade and what it does? In general, a marinade is a mixture of ingredients (usually liquid) used to flavor, soften and moisturize food especially meat. Liquid marinades are usually acid-base, allowing them to break down enough food to soak.
How long does meat should be left in the marinade? The deadlines vary depending on the strength of the marinade, but most importantly, the food is marinated marinating time determines the most.
If your marinade contains ingredients such as chili soy sauce and spices, or liquor, is very easy to do too much. You want food to taste like any food, however, it is. The chicken should taste like chicken and fish should try the fish. Surface addition, if an acid of the marinade left in the meat too long may become mushy or dry.
Here are some tips to help to over-marinate food. Remember, marinating time depends on the type of marinade used, so make sure there is no point to these guidelines.
15-30 minutes of small items like fish fillets, shellfish, meat and diced vegetables are tender.
1 to 3 hours thin slices of boneless beef, such as chicken breasts, pork loin, steak, chops and vegetables more robust.
2 to 6 hours, the thicker slices of meat without bones and without bones, such as whole chicken, leg of lamb and roast beef.
6 to 12 hours to larger cuts or tougher meat, including whole ham square ribs, shoulders and butts, and turkeys.
Let's look at some classic marinade recipes. Simply Mix all ingredients, place the food in a large plastic bag with zipper, pour the marinade Seal the bag and shake well. Refrigerate until ready to cook. These always be duplicated if you cook large quantities of food.
Lemon-Sage Marinade
1 / 4 cup olive oil extra
1 / 4 cup fresh lemon juice
1 lemon rind, finely ground
3 tablespoons fresh sage, finely chopped
2 tablespoons whole grain mustard
2 tablespoons chopped shallots
1 tablespoon black peppercorns
1 tablespoon minced garlic
Makes about 1 cup of the marinade mixture.
Teriyaki Marinade
1 cup pineapple juice
1 / 2 cup chopped onion
1 / 2 soy sauce cup, low sodium
1 tablespoon dark brown sugar
1 tablespoon fresh lemon juice
1 tablespoon chopped garlic
1 tablespoon grated fresh ginger
1 teaspoon sesame oil black
Makes 2 cups marinade.
Mojo Marinade
1 / 4 cup fresh orange juice
3 tablespoons oil extra virgin olive
3 tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro
1 tablespoon chopped garlic
Finely 1 tablespoon chopped jalapeno peppers, including seeds
1 teaspoon cumin
Kosher 1 / 2 teaspoon of coffee or sea salt
3 / 4 cup marinade.
Greek Marinade
1 / 4 cup + 2 tablespoons tablespoons extra virgin olive oil
3 tablespoons red wine vinegar
Salt 1 / 2 teaspoon kosher or sea
1 / 2 teaspoon dried oregano
1 / 2 teaspoon minced garlic
1 / 4 teaspoon red pepper flakes
Makes about 1 / 2 cup marinade.
